Ingredients
  

  • 1 cup Mashed sweet potato
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Brown sugar
  • 1/4 cup granulated sugar
  • 1 Egg
  • 1 tbsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tbsp salt
  • 1 tbsp cinnamon
  • 1/8 tbsp nutmeg
  • 1/8 tbsp Ginger

Instructions
 

  • Preheat your oven to 350°F.
    In a mixing bowl, combine the mashed sweet potato, softened butter, brown sugar, and granulated sugar. Mix well until smooth.
    Add the egg and vanilla extract, and mix well.
    In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
    Gradually add the dry ingredients to the wet mixture, stirring until just combined.
    Using a cookie scoop or spoon, drop dough onto a baking sheet lined with parchment paper. Flatten each cookie slightly with a fork.
    Bake for 10-12 minutes, until the edges are golden brown.
    Allow the cookies to cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.
