These heavenly pancakes are also known as souffle pancakes, and they are unlike any other pancake you’ve ever tasted, a new family favorite.

  • ¼ tsp Pure Vanilla Extract
  • ¼ cup Cup Cake Flour
  • ½ tsp Baking powder
  • 2 tbsp Sugar
  • 1 tbsp Neutral-flavored oil (vegetable, canola, etc) (for greasing the pan)
  • 2 tbs[ Water Fresh Whipped Cream
  • ½ cup Heavy (whipping) cream
  • Optional Add strawberries, Ice cream or anything you like for decoration

Notes

Instructions:
  1. In a medium bowl, whisk together the egg yolks, sugar, milk, flour, baking powder, salt, and vanilla extract until smooth.
  2. In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.
  3. Gently fold the egg whites into the batter until just combined.
  4. Heat a non-stick skillet or griddle over low heat. Add a small amount of butter to the pan and let it melt.
  5. Spoon about 1/4 cup of batter onto the pan for each pancake. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through.
  6. Serve the pancakes immediately with your favorite toppings, such as fresh fruit, whipped cream, or maple syrup.
